Easy Tortellini


  • 1 bag or package of tortellini – frozen or dry will work
  • 1 cup fresh spinach, shredded
  • 2 cans of Italian style diced tomatoes OR 2 cans diced tomatoes and 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 1 block cream cheese, cut into small cubes

Put all ingredients except tortellini and bring to a boil.  Stirring often, let simmer until cream cheese is mostly dissolved into the broth.  Add tortellini and cook according to package instructions, usually about 5-10 minutes depending on the type you are using.

Note:  this is also great with other add-in’s like cooked, shredded chicken, mushrooms, peppers, onions, etc.   It’s a great recipe to experiment with.  I don’t think you can ruin it.
